  • extra virgin olive oil
  • salt and pepper

Cover a pan that can hold the fish with parchment paper. Grease it with extra virgin olive oil, cover it with the potatoes and season with a drizzle of oil, salt and pepper. Now place the sea bream in it and wet them with the extra virgin olive oil, adding the pine nuts and raisins. I want to post two recipes that I prepared days ago (obviously at different times).
the first belongs to my mother. it follows a recipe that I published some time ago (sea bass a cassola), provides the same ingredients and the same type of cooking (in short, it is a replica ..), the difference is that instead of sea bass I used sea bream (you can use them indifferently both).

Cassola sea bream:

2 fresh sea bream, gutted and scaled
a few slices of fresh tomato, not too thick
dried tomatoes in salt in pieces (previously removed from the seeds through the tip of a knife with a smooth blade, then rinsed under running water to remove any excess salt and very well dabbed with absorbent kitchen paper)
garlic (2 large cloves)
parsley (a generous handful and a half)
homemade olives in oil (in my opinion they are the best for cooking)
1 2 glass of white wine
extra virgin olive oil

Gut and scale the sea bream, then rinse them under running water and dry them well with absorbent kitchen paper.
Salt them both inside the belly and on both sides.

Arrange a few slices of not too thick fresh tomato on top of this mince. Salt a little. Arrange on each slice pieces of dried tomato broken with your hands.

Place the fish.

chopped garlic and parsley.
