Mix the yeast with the powdered sugar and warm milk. In a bowl sift the flour and add the dissolved yeast. We add the soft butter and the yolks and we start to knead and then we can add the salt powder. Knead well until the dough no longer sticks to your hand.


Wrap the dough in cling film, or put it in a plastic bag and put it in the fridge for 24 hours.

The next day we take out the dough 15 minutes before using it.

For the filling, peel the apples and seeds and cut them into thin slices, then sprinkle them with a little lemon juice. Mix the sugar with the starch, cinnamon and rum and add it over the apples. Mix lightly and finally add the raisins.


Divide the dough out of the fridge into two equal parts. We will have two braids.

We spread each piece of dough in a rectangular sheet (~ 25x35 cm). Straighten the edges with a sharp knife. Put half of the apple filling in the middle of the sheet. We cut the edges obliquely, in strips of ~ 2 cm.


Then cover the filling alternating strips of dough. We put the braid in the tray lined with baking paper.

Do the same with the other piece of dough.

Then grease the surface with the yolk dissolved in 2 tablespoons of milk and put in the oven, on the right heat, until it browns on top.

After baking, let it cool and then powder with sugar.

Moisturizing solution for hair

Ingredient: an egg yolk, a teaspoon of honey, 1/4 cup olive oil, 1/4 cup apple cider vinegar.

Method of preparation: beat all the ingredients well for a few minutes, or put them in the mixer to obtain a soft cream. Rub your hair and scalp with this mixture and leave on for 10 minutes. Wash with shampoo and rinse with water in which you put a few drops of vinegar.


Ingredients Woven apple strudel

225 gr flour
1/2 sachet of dry yeast
40 gr sugar

1 vanilla essence
80 ml of warm milk
1 pinch of salt
125 gr butter + 1 tablespoon flour

4 apples
cinnamon
3 tablespoons sugar
2 teaspoons starch

Preparation Woven apple strudel

  1. Knead an elastic dough from all the ingredients except the buttered flour. If the dough is a little sticky (it also depends on the size of the egg) add a little more flour. I put another spoon.
  2. Shape the dough into a rectangle, wrap it in plastic wrap and refrigerate for 30 minutes.
  3. Rub the butter at room temperature with 1 tablespoon of flour until frothy.
  4. We prepare the filling: we clean the apples. We take out their backs and cut them into slices.
  5. Put 3 apples in a small pot, add water to half of them, add cinnamon to taste and sugar and cook for about 10 minutes, until the apples are soft.
  6. Drain the water from the apples and then mash them in a blender. We put the puree back in the pot, we taste sugar and cinnamon and if you want you can put more. Bring the puree to a boil and add the starch in turn. We took it off the fire.
  7. Cut the remaining apple into small cubes and add them to the puree. The filling is ready!
  8. Remove the dough from the fridge, roll it out into a rectangle and grease it in the center with 1/3 of the rubbed butter. Bring the side edges over the butter and then fold once more from the opposite end (see pictures). Wrap the folded dough in plastic wrap and refrigerate for 30 minutes. Repeat this step 2 more times with the rest of the butter.
  9. Spread the dough on a 30cm x 20cm sheet on baking paper. Draw two lengthwise lines to divide the dough perfectly into 3.
  10. On the side pieces make cuts a little diagonally every 2 cm using a cutter or a dough cutting wheel.
  11. Place the filling in the center along its entire length and lift the ends opposite the cuts to seal the filling.
  12. Then knead the dough bringing the side strips over the filling.
    * try to pull each strip as much as possible to the opposite side, I did not do so unfortunately, I took the strips to the middle and an idea came out a bit wide strudel is just a matter of appearance that I realized after I did it
  13. Gently move the strudel with the baking sheet on the tray. Put the tray in a large bag and leave to rise for 2 hours.
  14. Bake in the preheated oven at 180C for 25 minutes.

Apple strudel

I don't know if you missed me, but I certainly missed you. I was very, very busy with the evening of cooking at the Petit Restaurant, on the way to Bucharest, sprinkled with trojans, blizzard and a rubber feather, but in the end I arrived safely.

I'll tell you about the whole Petit experience and the wonderful people I've met there these days, I promise. Until then, a simple recipe, the simplest apple strudel in my life of strudels, as my friend Lulu would say.

Ingredient:
& # 8211 a sheet of puff pastry (400 gr)
& # 8211 2 large apples, peeled, cut into very small slices (approx. 500 gr)
& # 8211 1 or
& # 8211 1 tablespoon flour
& # 8211 4 tablespoons sugar
& # 8211 a tablespoon of cinnamon
& # 8211 2 tablespoons raisins
& # 8211 a tablespoon of butter

Heat a pan and melt the butter. Put over the apples, cinnamon sugar and mix well (I would like to mix with the pan, cleverly like the guys from Petit, but it seems that I limit myself to the wooden spoon for now). Saute the composition for about 10 minutes, until the apples are soft, then add the flour, mix well and leave on the fire for about 1-2 minutes, until it binds.

Spread the dough sheet (after thawing it, normally) and put the composition in the middle, so as to leave 3 cm at the top and bottom. The side edges fold over. Beat the whole egg and using a brush, grease the strudel well with egg. Bake in the preheated oven at 180 degrees, 20 minutes or until the dough is nicely browned. They come out around 8 servings.

I served the hot strudel, with caramel ice cream on top. DELICIOUS.


Apple cake

In a bowl, put flour and butter, sugar, lemon peel and egg yolk. Stir and then pour the apple juice. Mix to obtain a homogeneous dough. Sprinkle the flour on the work table and spread the dough according to the size of the baking tray.

Transfer to the baking tray, making sure that the dough rises on the walls of the pan. Refrigerate. Peel the apples and cut them into four and then slice each quarter without peeling it completely. It has to look like a fan.

For the almond cream, press the juice of half a lemon, which is lightly beaten with the egg and the yolk. Slice the almonds with a rolling pin. Mix the soft butter with the sugar to obtain a frothy cream in which you add beaten eggs, lightly crushed almonds and the two types of flour. Spread the baking cream over the dough, leveling it.

Place the apples on top of the almond cream. Bake the cake for an hour. As soon as it is removed from the oven, grease it with heated jam.


Clafoutis with caramelized apples

Nicknamed, in my view, the dessert of any season or the dessert of any inexperienced. The original recipe is with cherries, but it's too easy to customize without trying many combinations. It is prepared extremely simply, the dough being similar to that of pancakes, but a little sweeter and more aromatic.

Ingredients
  • 3 apples
  • 4 eggs
  • 120 g of sugar
  • 1 tablespoon brown sugar
  • 220 g of flour
  • 300 ml of milk
  • 1 tablespoon butter
  • Vanilla
  • A pinch of salt
Dough preparation

In a tall bowl, I mixed the eggs with a pinch of salt, at high speed, until they frothed nicely. I added vanilla and sugar and mixed for another 3-4 minutes, until it got a creamy and light texture. I added the milk and mixed. I started adding flour, gradually, until I finished the amount. I set the dough aside to let the air bubbles out, because I don't like to throw the bowl off the worktop.

Preparation of caramelized apples

In a high-walled pan I melted the butter and added the apples cut in half, cleaned only of "mustaches", not the back. Pectin is easier to extract from the stalk, I use apple stalks to make the fruit peel. Ideally, you should use a frying pan that is also used in the oven, I turned to Tefal Ingenio, because it has a removable handle and I made the oven tray in a second.

I roasted the apples for a few minutes on all sides, as far as they can turn, then I sprinkled brown sugar and kept them on the fire for another 3-4 minutes, until they caramelized nicely.

I took them out of the pan, detached the Ingenio handle and lined the former pan, now a tray, with a tablespoon of white sugar. If leftover burnt sugar remains after caramelizing the apples, wipe with a napkin and then line with sugar.

Then I poured the dough made earlier and placed the apples in the middle, carefully. They will not be very obedient, they will tend to sink, so they must be placed carefully, then immediately baked at 180 degrees for about 25 minutes, until the cake is browned on the surface.

This cake is delicious hot or cold, with apples or cherries, eaten directly with a spoon or slice. I highly recommend it for a Sunday with a craving for sweets and too little appetite for cooking.


Method of preparation

We prepare the apples

We put them in a bowl over low heat, together with the sugar and cinnamon and leave them until they change color and leave a little syrup, then we stop 4-5 tablespoons of them which we put in a strainer to drain the syrup, and over those in the bowl add the semolina, mix well and remove from the heat.

We let them rest until we prepare the top.

Prepare the top for the cake with grated apples and meringue

For the top, rub the butter with the sugar and a little salt until it becomes frothy, add the yolks, lemon peel and essence and mix well.

Dissolve the baking powder and ammonium in the yogurt, stirring slowly to form the foam and add the mixture over the above composition.

Homogenize the composition well and begin to gradually incorporate the flour.

It comes out a slightly thicker composition than the cake.

Assembling and baking the cake with grated apples and meringue

Wallpaper the tray with baking paper and turn the composition over in it, level with the back of a spoon and put in the oven for 25 minutes at 180 degrees.

I used a 26/36 cm tray and the top came out quite high.

After 20-25 minutes, during which time the countertop has risen and colored a little on the surface, remove the tray and spread the apple composition, which did not cool completely, level and bake for another 10 minutes.

Prepare the meringue

For the meringue, beat the egg whites with a little salt until they become a white and fluffy foam, then gradually add the sugar and lemon juice, beating vigorously until it hardens well.

Remove the tray from the oven, spread the meringue well over the apple composition, and sprinkle the stopped and drained apples on top.

Put the tray back in the oven for another 10 minutes, until the meringue is nicely colored.

The cake with grated apples and meringue is a very fragrant and delicious cake, you lick your fingers for good!
