What I like this time of year when the streets smell of lime blossoms and the smell of ripe strawberries in the markets tempts you to buy them! And try any recipe just to be with strawberries :). It seems like you are in such a hurry to make something with them jam, jam, syrup, cake, foam & # 8230 something fast or something more elaborate, but as soon as their season passes and we can't find them anymore. This fever overwhelmed me the other day when all the stalls in the market were full of strawberries, I wanted to make a cream cake but then due to lack of time I incorporated a delicious dessert that was consumed as soon as it was ready :).

The recipe is quite common on the internet because it is quick and easy, I made it by eye but I try to write the quantities of ingredients to have a sure success.

Ingredients (5 200ml cups)

  • 150g whole digestive biscuits (I had these but you can use cookies or if you like Oreo)
  • 200g mascarpone or rircotta
  • 400ml fresh
  • 300g well ripened strawberries
  • 4 tablespoons sugar
  • optional grated chocolate for decoration

Wash the strawberries well and strain them, then crush them with 3 tablespoons of sugar.

We grind the biscuits finely, we mix 200ml of whipped cream with mascarpone and a teaspoon of powdered sugar, we keep the rest of the whipped cream for decoration.

In the prepared cups or glasses we put a layer of biscuits, then the strawberry jelly, the mascarpone cream with whipped cream, we repeat and garnish with whipped cream on top. A little grated chocolate and a mint or lemon leaf give a wonderful effect to this dessert.

If you don't have appetizers around, let them cool for an hour. I didn't catch it, in fact the legs stayed behind me all the time I prepared them, and until they washed my hands I managed to take two glasses :)

You can try this dessert with any other favorite fruit but it should be flavorful.

Cake with cheese, chocolate and strawberries

We grind the biscuits. Melt the butter, then mix it with the biscuits. Put baking paper in a tray, then press the biscuits well in the tray. Insert the tray cold.

Mix the egg whites with the sugar. Mix the cheese with the vanilla pudding powder, then add the yolks. Mix well. Add the egg whites, stirring lightly. We pour three quarters of the cheese composition into the tray, over the biscuits, distributing it evenly.

Mix the remaining cheese composition with half an envelope of chocolate pudding. We put this composition in the tray and, with the help of a knife, we lightly mix the two cheese compositions. Put the tray in the preheated oven, over medium heat, until it browns slightly on top and the edges come off. I browned it a little more.

Let the cake cool. When it is cold, place the thawed strawberries (they can also be used fresh) and the chocolate icing over the cake.

I didn't have liquid cream or sour cream and I used chocolate, butter and milk for the icing. I melted the chocolate with butter on the fire and, because it was very thick, I thinned it with sweet milk.

For the chocolate icing, you can use 200 g of chocolate with 100 ml of sour cream (liquid cream).

Strawberry and yogurt cake


For the crispy countertop:

- 75 g of browned almonds, finely ground

- 162 g of wafers with chocolate cream

- 100 g of unsalted, melted butter.

For the yogurt cream:

- 454 g of creamy Greek yogurt, 9% fat (including whey)

- 1 teaspoon of vanilla essence

For the cake:

- whipped cream for decoration (optional)

- chocolate shapes for decoration (optional).

- silicone foil for baking

- 6 baking rings of 7.62 cm x 7.62.

Method of preparation

You will deal primarily with the crispy wafer top, similar to the one for cheesecake.

1. Put the silicone foil on a baking paper, then cut from another piece of paper some strips measuring 25.4 cm and 10 cm. Put the rings on the silicone foil and then line them with the strips cut earlier, securing them with adhesive tape.

2. In a food processor, grind the almonds until you get a fine powder, then put them in a small bowl.

3. Take the wafers and put them in the food processor, grinding them until you get a fine composition. Add the almonds and sugar over the wafers and process the composition until smooth.

4. Add the melted butter and mix everything until the dough softens.

5. Divide the countertop into equal portions at the base of the baking rings (approximately 2 tablespoons in each shape). Using the bottom of a glass, press and level the surface of the dough.

6. Refrigerate the countertop for one hour.

Then comes the yogurt cream:

1. Put the gelatin sheets in a bowl of cold water and let them soak for 10 minutes.

2. In a small frying pan, heat the milk until it is hot, but not enough to boil. Take it off the heat, then remove the gelatin sheets from the water, squeeze them and add it to the warm milk, stirring until it dissolves. Allow the mixture to cool.

3. Place the yogurt in a medium bowl, then, using a fine sieve, sprinkle the powdered sugar over it and mix well with a spoon until incorporated. Add the vanilla essence and mix again. Add the milk with gelatin to this composition, straining it through a piece of gauze and then mixing well.

4. Beat the liquid cream with a mixer, on medium speed, until it becomes hard, then add it to the yogurt cream in three series. After mixing well, put the cream aside.

In the end, all you have to do is assemble the delicious strawberry and yogurt cake:

1. Remove the countertop rings from the refrigerator.

2. Cut the strawberries in half, then stick them to the baking paper you lined the rings with. At this stage, you must have the patience to arrange the strawberries correctly, so that in the end they look exceptional.

3. Take the yogurt cream and add it over the counter and over the strawberries with a spoon, about halfway up the rings, fixed above the strawberries.

4. Add a layer of strawberries over the cream.

5. Continue to fill the forms with yogurt cream until you reach the edge of the baking paper with which you lined the rings. Cover the cakes with cling film and leave them to cool for 4 to 6 hours. It is important to cover them, because otherwise they will borrow various odors from the refrigerator, which is not exactly appetizing.

6. Remove the baking paper from the rings and unwrap the rings as well. Put the cakes on a plate, decorating them with whipped cream and chocolate shapes (find out HERE how to make them).

Even if it seems to you that there are quite a few steps to follow to do it strawberry and yogurt cake, you have to admit that the idea of ​​getting a dessert without baking is much more tempting now, when the heat has come!

Thinking of a good dessert without sugar, I prepared this delicious cake with yogurt, white chocolate and strawberries.

  • 200 gr strawberries
  • for glazing:
  • dark green Velvet chocolate

How to prepare cake with yogurt, white chocolate and strawberries:

This cake with yogurt, white chocolate and strawberries is very easy to make.

First, prepare the countertop.

In a bowl, separate the egg whites from the yolks. Whisk the egg whites with a pinch of salt. When they become dense and gain consistency, add the sweetener, continuing to mix until you get a glossy meringue. Add the yolks, stirring constantly. At the end, add the sifted cocoa and mix with a spatula to keep the air from the egg whites.

Once the composition is homogenized, it is poured into a baking dish provided with baking paper. Bake in the preheated oven at 170 degrees C for 20 minutes.

After baking, remove from the oven, then leave to cool.

After tempering, the top is syruped with black coffee (or sweetened to taste).

The same form of baking is used to assemble the dessert.

Gelatin is hydrated in cold water.

In a bowl, on the fire, put the liquid cream. As it heats up, add the white chocolate, stirring constantly until it melts and homogenizes the composition. Add 2 lg sweetener and crushed lemon grass in a mortar. Mix, and at the end add hydrated and drained gelatin. Leave it on the fire for 1-2 minutes, stirring constantly to melt the gelatin, then remove the composition from the heat. Strain and add over the Greek yogurt, mixing.

Wash and cut a few strawberries, place them on top of the syrupy top. Pour the yogurt mixture over the strawberries. Place a few slices of strawberry on top, then let the dessert cool until the next day.

Glaze with dark green Velvet chocolate and strawberries or as desired.

It is a fine dessert, flavored with lemon grass and sweet with white chocolate.

Top: grind the peanuts (the robot should not be too small), the biscuits as well, melt the butter, melt the chocolate and mix well all the ingredients together. In a round bottom cake pan, put foil and cover the walls with this composition.

Strawberry jelly: put the strawberries in the pan on the fire with the sugar and lemon juice. Let it boil for 1 minute and put the gelatin, set it aside, leave it to cool.

Cream: Beat the eggs together with the sugar on a steam bath until they double in volume and thicken then set aside to cool. Beat the whipped cream well until it hardens, then mix with the egg cream and mix well. Divide the composition in two: on one side put melted chocolate and half of the hydrated gelatin. Mix well and then put the cream in the cake pan.

Put the strawberry jelly over the cream and put it in the freezer for 15 minutes until it hardens. Over the strawberry jelly put the other half of the cream in which the 4 lg are mixed with garrone and the rest of the gelatin.

Place a row of biscuits on top and let it cool. After an hour, turn the roll on a grill and dress in chocolate icing.

Melt the chocolate in a steaming pan with the whipped cream and then roll it over. Top with a few strawberries.

Chocolate cake, figs and strawberries

This cake with chocolate, figs and strawberries overwhelms your taste buds because it is delicious! It is slightly moist and creamy, but not as dense as a brownie, and is perfectly complemented by dried figs and fresh strawberries.

As simple to prepare as it is! Like many other recipes, it involves mixing wet ingredients in one bowl and dry ingredients in another bowl. Then all we have to do is incorporate them until we get a homogeneous dough, add the fruit inside, pour it into the pan and bake with it !!

I used dried figs inside the cake, but if you want you can omit them or replace them with other dried fruits. Despite the fact that I am not a big fan of dried figs, I discovered some soft ones from Lidl, which I bought repeatedly and which behave very well in cakes, not being excessively dry and not having added sugar.

The chocolate icing on top is optional again, so if you're in a hurry or can't resist the urge, you can stop doing it.

The same dough can be used to prepare muffins or top for cream cakes, adjusting the temperature and duration of baking according to the shape or size of the tray.

Blackberry with chocolate and strawberries (fasting)

Step 1: Put water, sugar and oil in a bowl. Mix with a whisk until the sugar melts.

Step 2: Mix with a wooden spoon, in a deep bowl, flour, cocoa and baking powder.

Step 3: The dry mixture (flour, cocoa and baking powder) is poured over the liquid mixture (water, sugar, oil).
